Swedish Pancakes

Anyone that follows me on Facebook knows how much I love Swedish Pancakes. My mom used to make them and serve them with whipped orange butter, lingonberries and maple syrup. She always emphasized that the syrup was REAL maple syrup right before she drowned her pancakes in it.

Me, I’m not so much a fan of maple syrup, real or fake. I’d rather have a little bit of apricot syrup dribbled on my pancakes.


Swedish Pancakes
4 Eggs
1 2/3 cup Milk
1 cup flour
3/4 tsp salt
1 1/2 Tbs. Sugar

Put all ingredients into a blender and blend until smooth. Pour the batter into the buttered wells of a hot Dollar Pancake Griddle. If you don’t have a Dollar Pancake griddle, pour out onto a buttered griddle in small circles.

Butter the pancakes and spread with Lingonberries. Pour maple syrup over all.


Laura Renner’s Apple Roll-ups

Laura Renner’s (That’s my grandma) Apple Roll-ups
2 apples
1/2 cup Crisco
1-1/2 cups flour
1 tsp. salt
4 to 5 Tbsp ice water
1/2 cup melted butter
1/2 cup sugar
1/2 cup water
1 tsp. cinnamon

Peel and core the apples. Slice each apple into 8 wedges. Sift together flour and salt and cut in Crisco. Moisten with ice water. Roll the dough out into a 10 x 16 inch rectangle. Cut into 2-inch strips. Wrap a piece of dough around each apple wedge. Arrange in a 9 x 13 inch baking pan, making sure the pastries don’t touch each other or the sides of the pan. Brush with melted butter and sprinkle with a mixture of 1/2 cup sugar and 1 tsp. cinnamon. Pour 1/2 cup water over the pastries. Bake in a 425 degree oven for 25-30 minutes or until golden brown. Serve warm or cold, plain or with cream or ice cream…



Orange Oatmeal Craisin Cookies

Orange Oatmeal Craisin Cookies
2 sticks of margarine or butter, softened
1 cup firmly packed brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3 cups old-fashioned oats
1 cup Craisins
3 tablespoons grated orange peel (fresh works best)
a few squeezes of fresh orange juice from the orange you just grated the peel from.

Preheat over to 350 degrees.

Beat the sugars and margarine together until creamy, then add the eggs and the vanilla.

Add the flour, backing soda and salt. Mix well.

Stir in the oats, Craisins, orange peel and juice.

Drop by rounded tablespoonsful onto an ungreased cookie sheet. Bake for 10 – 12 minutes or until golden brown. Cool one minute on the cookie sheet, then remove to a wire rack. Makes about 4 dozen.
